A frozen order can leave the dispatch freezer in perfect condition and still arrive softened because the packaging decision began with bag size instead of the route. That is a useful orientation point, but it does not eliminate the need for a product-specific delivery limit. Separate three concepts in the specification:

These values may not be identical. Treating them as one number can lead to either needless disposal or an overly permissive frozen-delivery promise. Local rules and customer requirements also vary. The FDA Food Code is a model offered for adoption by jurisdictions, so the adopted code and the establishment's own plan should be confirmed.

The acceptance statement should cover physical condition as well. A frozen product can be too crushed, mouillé, fuite, or contaminated for acceptance even when its temperature reading is within range. Inversement, no employee should taste a questionable item to decide whether it is safe.

Use Five Decision Gates Before Approving a Backpack

A gate-based review prevents attractive features from bypassing basic suitability. Each gate asks for a decision and a piece of evidence.

Failure at a gate is useful information. It may point to a shorter route, different service promise, smaller order zone, plus robuste expéditeur passif, refrigerated vehicle, or active container. The objective is not to force every lane into a backpack format.

Translate the Route Into a Thermal Challenge

Measure route time from removal from controlled frozen storage to placement in suitable storage or final accepted handover. Build a Packout Around Heat Flow and Access

Evaluate it fully loaded and while worn or mounted as intended.

The liner should resist the defined cleaning process and remain flexible at service temperatures. Seams must be visible enough to inspect and shaped to avoid trapping liquid. Sealed primary food packages should provide the first barrier against leakage; the backpack is secondary containment, not a replacement for correct food packaging. If a liner or other component is intended for direct food contact, verify its regulatory status for the actual food and conditions of use in the destination market.

Select refrigerant against the product requirement. A water-based frozen gel pack may add useful thermal mass for a short route, but its phase behavior near the freezing point of water may not support a product that must remain deeply frozen in a difficult lane. Other phase-change materials can be selected around different transition regions. Whatever the format, request thermal data, instructions de conditionnement, pack durability information, and packout-specific test evidence.

Glace sèche, solid carbon dioxide at about -78.5°C, can serve demanding frozen applications. It also creates risks that change the packaging and operation. Contact can injure skin or damage some packages, while sublimated gas can build up in poorly ventilated spaces. The package must not be gas-tight. Place cold sources where the thermal load occurs and secure them against shifting. Dedicated sleeves can improve repeatability. Use barriers where direct contact could damage food packages. Condition every component as specified. A warm bag and divider absorb cold on loading. Refrigerants need a verified preparation method, not merely "leave overnight." Product must enter at the approved dispatch condition. A passive packout is designed to maintain a starting state for a limited challenge; it is not a substitute for blast freezing or controlled storage.

Generate Evidence That Resembles the Real Delivery

A supplier report is useful only when its conditions are visible. Controlled testing can use an environmental chamber or another justified setup. Standardized approaches such as ISTA 7E can inform emballage thermique development for parcel distribution. A single unusually cold location may show direct refrigerant contact rather than superior control.

Follow laboratory work with a field pilot. Know When the Backpack Is the Wrong Answer

It may be the wrong format for long unattended delivery, very heavy loads, unpredictable return times, severe ambient exposure, high dry-ice quantities, frequent mixed-temperature access, or routes that cannot tolerate passive-system variability.

Do not solve every exception by adding refrigerant. More cold source reduces food space and increases weight; it may also create cold spots or new handling hazards. Alternatives include a smaller service radius, route caps, separate order modules, intermediate frozen storage, a rigid passive shipper, refrigerated vehicle, powered container, or revised customer promise.

The key management decision is the operating envelope.
