How Much Dry Ice for Frozen Food? Specify Mass, Not Pack Count

The number of dry ice packs is not a reliable quantity specification unless each unit’s actual mass and form are known. For frozen food, record the dry-ice mass loaded at dispatch and test it with the specified food load, container and route. No universal pounds-per-day or food-weight ratio covers every shipment.

Translate a purchasing unit into a packing specification

A “pack” may mean a slab, a bag of pellets or a non-CO₂ cold pack. Establish the actual coolant identity, mass and dimensions. If it is solid CO₂, material lost between purchase and packing affects how much is available at dispatch.

InputWhat the packing instruction should specify
Coolant identitySolid CO₂ or the exact alternative formulation.
QuantityActual loading mass, with consistent units.
Form and sizeThe form represented by the trial and compatible with the layout.
Preparation and loadingThe starting conditions, positions and separators.
Food loadProduct identity, dimensions, mass and allowed variations.

Separate food requirements from coolant requirements

Use the food product’s temperature and handling requirements. Different recipes, primary packages and quality expectations can require different acceptance decisions, even when all goods are described as frozen food.

Prepare the food according to the dispatch procedure. A warm payload adds a different thermal load from one at the intended shipping condition; simply adding more dry ice is not a substitute for controlling preparation.

Evaluate candidate quantities

  • Select a compatible shipper with suitable closure and gas release.
  • Use representative food loads and ambient exposure.
  • Monitor justified product locations throughout dispatch-to-receipt time.
  • Record dry-ice mass at loading and at the defined endpoint.
  • Compare temperature results with the product limits.
  • Retain the accepted loading specification and configuration.

For the calculation itself, see measurement-based dry ice estimation. This food-shipment checklist converts the trial result into loading instructions; it does not provide a second universal formula.

Prepare the receiving decision

Tell the receiver when the parcel is expected and how to handle it promptly. Define what to do if it is delayed, damaged or outside the product conditions. Arrival temperature alone may not establish the earlier commercial temperature history.

USDA FSIS: mail order food safety gives US consumer guidance for mail-order perishables. Keep that household receiving advice separate from the commercial product specification and food-safety assessment.

For applicable US aircraft or water transport, refer to 49 CFR 173.217: carbon dioxide, solid and the carrier’s current acceptance process. A quantity that fits the box is not automatically accepted for every service.

Frequently asked questions

Can I buy the same number of slabs for every order?

Only if their actual mass and the permitted payload and route remain within the accepted specification.

Is all remaining dry ice usable for the next load?

Assess identity, condition, mass and handling under the applicable procedure. Remaining material is not a restored original quantity.

Should meat always use more dry ice than vegetables?

Food category alone does not determine quantity. The complete load, temperature requirement and exposure matter.

Keep the specification practical

Give packers a mass target and a loading drawing, not only a purchase-unit count. Record substitutions or shortages before dispatch so an untested configuration does not enter routine shipping.
